TERROIR
Pudding stones on the surface, which store the heat from the sun during the day and transfer it to the vines at night. Red clay sub-soil.

GRAPE VARIETIES
One third Grenache, one third Syrah and one third Mourvèdre

VINIFICATION / ELEVAGE
Traditional vinification in stainless-steel tanks; 21 days’ vatting, on average; one year’s maturation in demi-muids (600 litres) or two and three-year-old barriques (225 litres) and then a minimum of one year in bottles before being released.

CHARACTER
Deep, intense ruby hue. Red fruit and spice aromas dominate, accompanied by hints of vanilla. Roundness, structure and finesse on the palate.

ACCOMPANIMENT
Drink it today, after airing it for a few hours, or in eight to ten years. This wine will express its aromas of cocoa or vanilla to the full with game dishes such as jugged hare, or perhaps with coq au vin. A perfect accompaniment, too, for a forêt noire or any other chocolate-based dessert.
